I got this recipe some time back from my friend Jodee Linta in AZ. We used to teach in rooms beside each other in Michigan. Jodee taught home sciences, so you can be sure that she has a lot of good recipes. This is a nice change from the usual chicken salad, and refreshing for a summer's lunch.

Napa Chicken Salad

2-4 boneless chicken breasts
1/4 c sliced almonds
1/2 c sesame seeds
1/2 stick butter
2 pkg Ramen Noodles (Jodee - I like the oriental flavor)
1 large Napa cabbage, cut up
1 bunch of green onions, chopped

make this dressing first:
1/2 c vegetable oil
1/2 c sugar
1/4 c cider or wine vinegar
2 T soy sauce
2 T poppy seeds

1. Marinate chicken in some of the dressing for a least 1/2 hour. Grill and then slice chicken.
2. Melt butter, break up noodles and cook with the sliced almonds and sesame seeds until crispy. Cool.

3. Mix all together with remaining dressing and chill.
